I like picture #2 quite a bit. Nice usage of an angle and you were able to keep the whole shrimp in frame and in focus. This is a very difficult subject to expose properly and you did a good job.
#1 it gets a little lost with the background but again a nice angle. Crop that one tightly and it is great. The upward angle on that is better composition than the straight down angle on #2...
I'd say keep up the good work...
I agree with Mike, and my favourite is #2 as well. I really like the detail and exposure on the shrimp. The diagonal orientation transforms it into an interesting composition.

Thanks for all the kind comments...
Do you think this will make a better picture?

Given the position of the shrimp, I think a vertical orientation would look better...

I agree with the previous comments. I think putting the subject off center would also help. Centering the subject is fine if the key focus point of the shot is not centered. (usually) I only say this as you appear to center the subject in the frame.
Pic number 1 was good cause it was straight on but the shrimp is just too translucent in the pic with the background. Pic 2 is a well taken and a great representation. Pic 1 would have had better impact but nothing you could have done other than maybe play with the strobe somehow. You could crop the pic a little, play with the burn tool a little to darken the back ground and get a little more saturation pop on the bands on the shrimp.
