Last weekend went diving with my G11 and I kinda notice there were instances that the camera would not shoot, and if i try to change the settings for Aperture and Shutter Speed i couldn't. So i would restart my camera after, was the camera sorta hanging when i try to shoot with a setting that can't be done or was it just really hanging like a software glitch?

Frequently, I've had cams hang when the zoom lever is slightly pressed to one side or another, without meaning too. The housing zoom lever doesn't center quite...
It might be something like that.
Or could it be really long flash recycle times? Were you shooting RAW?
You might try setting everything up with the housing and strobe and play around with settings - see if you can get the same behavior dry.

i was shooting raw or i always shoot raw.
isn't there a big difference shooting under and on dry? i mean would i get the same effects when i try to shoot with the same settings that i had problems with underwater when i try to shoot it on land?

I think that it's a button pressing slighty a camera button or the zoom lever thus avoiding to take a picture.
On my PATIMA housing sometimes the knob turning the wheel is in a "bad" position and block
the camera but turning it a bit will recover full funcionality.
As i never had problema above water it must be something housing related.

but I think the problem is coming from my memory card, it kinda hangs when you're pushing a lot of buttons too fast

You may have sticky buttons and a part depressed one may have the effect you describe. suggest cleaning the buttons by repeat pressing with an empty housing in fresh water then dry then repeat and grease the orings fom the in side on the buttons.

How deep were you?
Slight misalignment of the camera in the housing can do this on most cameras, particularly the more sophisticated ones where the tolerances are small. One control is activated, locking the system to whatever was set at the time. It has happened to me with both Subal and Inon housings, but only deeper than 100'.
I don't know if there is a specific problem with your combination of camera and housing.
